Recipe: Pie Crust from Oh Hi Handpies

Baking pie is something I really only realized I could do at home once I discovered I could make pie crust with a food processor! While pie crust can feel intimidating, I have found it to be really easy and forgiving.

I want to share my recipe because it really is so incredibly simple! It’s easy to freeze and if you don’t have any pie filling you’re fond of (I’ll share more recipes soon!) you can simply add your favorite jam and bake them up, a sort of home-made pop tart.

HANDPIESPIE CRUST SUPPLIES

2 Sticks of Butter

2 Cups of Flour

1/2 Cup of Ice Cold Water 

Food processor, knife, plastic wrap

Directions:

  1. First you need to ensure you have all of your ingredients ready and CHILLED! Pie dough is not meant to be warm as the butter will start to melt and change the consistency of the dough. So you must be ready to work swiftly.

  2. Add 2 cups of all purpose flour to your food processor.

  3. Chop your chilled butter into 1/2 inch cubes. Use a knife to cut the butter then add this to your flour in the food processor.

  4. Run your food processor on low or pulse for short time to get the butter slightly incorporated into the flour. It should not be fully blended, more or less simply further diced up and coated in flour at this point.

  5. Through the opening on the cover of your food processor lid, slowly stream in the 1/2 cup of water while the food processor is running on low. This should not take more than 30 seconds. You don’t want the dough to get overworked, instead it should only run to the point where the flour and butter is mostly incorporated and can start to form a dough. There will likely still be crumbled and dry spots. This is ok!

  6. Remove the dough from the food processor and place on a sheet of plastic wrap. Use the plastic wrap to wrap completely around the ball of dough and cover the entirety of the dough. The plastic wrap will help bring those dry pieces and crumbs together as they set up in the fridge.

  7. You may want to slightly flatten your wrapped dough for easier storage and for future rolling. Then place this in the fridge for chilling.

  8. Chill for at least 2 hours in the fridge. If you are in a rush, place in the freezer for 20 minutes.

  9. When you’re ready to roll, let your dough rest on the counter for about 10 minutes for easier rolling, but not too long! Don’t forget that pie dough needs to stay cold until it heads into the oven.

    1. Roll your dough into your desired shapes! When ready, par bake for full size pies at 350 or for handpies, put your formed and filled pies into the oven at 420.
